1 beaten egg

breadcrumbs

salt and pepper

½ cup vegetable oil

Dust cutlets with flour and dip into beaten egg and then breadcrumbs. Add salt and pepper. Pour oil into frying pan and heat. Fry the cutlets for three minutes on each side. Do not overcook. Serve with a lemon wedge.

While this book is meant to feature local, independent restaurants that were part of the fabric of Greenville’s culinary history, the importance of Ryan’s Family Steak House as the original location of what became a leading national chain is an exception. The story of this remarkable venture begins with Alvin McCall Jr., who grew up in the upstate mill community of Pelzer, South Carolina. His parents worked at the textile mill, and as was common, their large family lived in one of the tract mill houses of the mill village. Just five rooms in the house and one outhouse were shared among the parents and eleven children. Alvin McCall, named after his father, was the ninth child and knew from a very early age how to work hard.

After a successful college education, Alvin landed his first significant job with the Elliott Davis firm but began dabbling in the housing industry by building a few homes. According to a Greenville News interview, he found that he enjoyed the business and started the McCall Construction Company, where he would go on to develop familiar Greenville neighborhoods like Heritage Hills, Pelham Estates, Pilgrim Point, Spring Forest, Merrifield Park and Wade Hampton Gardens.
